Season to Taste

I, like Jolly Old Saint Nicholas, have been making Christmas lists and checking them twice. Allow me to say, I am forever glad I had written on my quite lengthy list of things to do, “Attend the Pawhuska Historical Society Cookbook Sale.”

Let me tell you, it was a virtual cookbook lover’s paradise and exactly the treat I needed on a snowy Sunday afternoon! In fact, the opportunity to purchase some amazing cookbooks for your collection is still open! To my delight I scooped up some treasures but much to my chagrin, I had to leave a few golden nuggets behind. Please add, “Stop by the Historical Society Museum” to your list of “things to do.” It is a stress free time and a way to soak up a simple pleasure of the season.

Gooey Lemon Bars

Cake:

1 lemon cake mix

1 egg

1 stick butter, melted

1 cup nuts, optional

Filling:

1 (8 oz.) package cream cheese, softened

2 eggs

1 teaspoon vanilla extract

1/4 cup lemon juice

1 (16oz.) box confectioner’s sugar

1 stick butter, melted

Preheat oven to 350. Lightly grease a 13 X 9 pan. In a bowl with mixer, combine cake mix, egg, and butter and mix well. Pat into the bottom of prepared pan and set aside. Still using a mixer, beat cream cheese until smooth. Add eggs, lemon juice, and vanilla. Dump in confectioner’s sugar and beat well. Reduce speed of mixer and slowly pour in butter. Mix well. Pour filling onto cake mixture and spread evenly. Bake for 40 to 50 minutes. Baking time may vary based on oven temps. Center should be gooey, so don’t bake it past that time. Remove from oven and allow to cool completely. Cut into squares.
