Season to Taste

I love entertaining but you know, I also love being entertained, especially when delicious food is involved. One of my favorite parishioners at church likes to say, “Don’t ever invite me to something if you expect me not to come.”

Ditto! AND……the last party I attended afforded me the most fortunate opportunity to partake of a scrumptious salad that ranked at the height of incredible. (You’ll be so happy I was able to snag the recipe.)

Sure To Be the Hit Salad

Mix together in a large bowl:

1 lb. spinach and romaine mix

1 ½ cups grape tomatoes, halved

1 cup dried cherries

1 cup candied pecans

1 cup feta cheese (or you can substitute parmesan)

Vinaigrette:

1 cup fresh raspberries, ½ cup apple cider vinegar, ½ cup balsamic vinegar, 2 tsp. sugar or more to taste, 1 ½ Tbsp. Dijon mustard, ½ cup extra virgin olive oil. Combine the berries and next 4 ingredients into a blender until smooth. Slowly stream in the oil until combined.
