Guess what? I just hit the jackpot and NO, it wasn’t at the casino.

When Kathy Scott offered to share some of her recipes with me, I had no idea she would present me with the Mother Load! Bing-Bing-Bing!!!

Some recipes from her delightful collection were surprisingly short and, seriously, how great is that?

The payoff occurs when YOU get to walk away from your kitchen with a lot of free time for fun, family and friends. Now that’s what I call a winning hand!

RECIPES FROM THE WINNER’S CIRCLE

Jackpot 1: QUICK MEXICAN CORN:

2 cans Mexicorn

1 pkg. frozen broccoli

1 small jar Meximild Cheez Whiz

Cook corn and broccoli until tender. Drain. Add Cheez Whiz and serve.

Jackpot 2: HOMINY CASSEROLE

2 cans Hominy (drained)

1 small jar Cheez Whiz (hot)

1 can cream of mushroom soup

1 small can green chilies

plain Doritos

Combine first 4 ingredients. Crush plain Doritos on top. Heat in hot oven until bubbly.

Jackpot 3: COPPER PENNY SALAD

1 can tomato soup

1 cup sugar

1 cup oil

3/4 cup vinegar

1 tsp. salt

1 large green pepper

2 pounds carrots

1 large onion

Slice onion in rings and separate. Slice green pepper into rings. Chop carrot to look like coins. Mix all and let marinate.
