Season to Taste

My husband enjoys getting together a couple of times a month with some of his buddies to play cards and share a little fellowship over a home cooked meal.

Now let me tell you, some of the men in that group that can flat hold their own in the kitchen!!! I am blown away by the variety of the menus these fellows come up with and trust me, I am always hot on their heels to get the recipes. (I know of one beef-and-noodle recipe I MAY LET SLIDE, but since that evening, Tillman has redeemed himself time and time again with some over the top/ make-ya-wanna-lay-down and scream food!! To protect the innocent, I won’t even mention the Taquito incident!

Each time my husband hosts, we try really hard to think of something to serve that everyone will want to devour. This time around I think we may be dealing out stuffed sweet potatoes on the side as the Ace in the hole!

Who Has The Winning Hand Sweet Potatoes

12 large sweet potatoes

1 and 1/2 sticks of softened UNSALTED butter

3/4 cup of light brown sugar

1/2 cup flour

1/4 tsp. cinnamon

1/4 tsp. salt

1 cup mini marshmallows

Scrub potatoes, prick with fork in three or four places. Put on a jelly roll pan or cookie sheet. Bake for 45 minutes at 350 / 375 degrees or until done. Mix all ingredients in a bowl. Open sweet potatoes, generously stuff with mixture. Return potatoes to the oven and bake 20 more minutes.
