Season To Taste

For most of us, “real life” isn’t about jet-setting from one exotic locale to the next, dining with celebrities in Five Star restaurants, or lying on a beach with a personal Cabana Boy catering to our every whim. Reality, for most of us, is that we share the ability to create extraordinary days out of ordinary days by spending time with those we love and hold dear. It really doesn’t matter if your day comes wrapped in glitter-animal print wrapping paper with a metallic bow on top or in a brown paper bag tied with a piece of twine. The truth of the matter is the day is your gift from God … and that is all that really matters.

When Life Gives You Cucumbers, Make Pickles

***For these freezer pickles, you will need to purchase some plastic freezer containers. They are inexpensive and can be easily found.

3 quarts of sliced cucumbers (not waxed)

2 large onions, sliced

2 red bell peppers, chopped

2 green bell peppers, chopped

1 bunch celery, chopped

1/4 cup pickling salt

3 cups sugar

2 cups white vinegar

Stir the last three ingredients together. Pour over the vegetables and allow the mixture to set out on the counter for the entire day. That evening, fill plastic freezer containers, making certain to leave a little head space at the top, wipe off the rim, put on the lid and then freeze.
